Comfort Brocoli 'Bacon' Bake

Who doesn't love a dish that is super creamy and a great comfort food for the cold weather! You'll fall in love with the smokey flavour from the turkey bacon and the garlicy creamy sauce which wraps around the brocolli - and a bit of cheese on top which gives the dish a cheesy touch.

Serves: 6-8 | Cooking time: 45 mins


1. 300ml single cream

2. 300ml onion and chive cottage cream cheese

3. 2 Brocoli heads

4. 300g of mushrooms

5. 130g of a block of chedder cheese

6. 3 handfuls of grated chedder

7. 6-10 pieces of turkey bacon

8. 1 Tsp. black pepper

9. 1/2 Tsp. sea salt

10. 2 garlic cloves

11. 1/2 Tsp. Garlic powder

12. 1 small red onion

13. 2 Tbsp. rapeseed oil

14. 1 tsp. Butter (optional)


1. Preheat the oven to 200°C

2. Heat the oil in a medium-large pot on a low heat

3. Finely chop the onion and garlic

4. Slice the mushrooms into bitesize pieces

5. Once the oil is hot, toss in the onions and stir. Fry on a low heat until the onions become soft

6. Next toss in the mushrooms and garlic in the pot. Fry on a medium-low heat until the mushrooms are cooked

7. Next, cut the bacon into small pieces and add this to the pot

8. Stir and fry for a further 2 minutes

9. Turn off the heat and transfer the contents of the pot to a separate bowl

10. Using the same pot pour in the cream and the butter. Bring the cream to the boil and then turn the heat down immediately.

11. Cut the block of cheese to bitesize pieces and whisk these into the cream.

12. Break off the stems of the broccoli, separate the heads and add them to the cream. Close the lid and 'steam' for 5-7 minutes

13. Add the contents of the bowl to the pot. Now add your seasoning and then add the cottage cheese. Stir until fully combined

14. Add the garlic powder, salt and pepper. Stir

15. Turn off the heat and then pour out the contents into a desired cassrole dish

16. Sprinkle the cheddar on top

17. Bake in the oven for 10-12 minutes or until the cheese becomes golden brown

18. Take out the bake out of the oven and allow to cool at room temperature for about 5 minutes before serving
