Sweet chilli chicken roast: a Sunday roast twist

How to twist a Sunday roast dinner in 40 minutes. You'll probably take never ending pictures with this one but if you're hungry... get cooking!

Ingredients

1 whole chicken (chopped)

4 tbsp. Olive oil

3 Maggi® stock cubes

1 tsp. Cumin

2 tsp. Black pepper

1/2 tsp. Turmeric powder

1 1/2 tbsp. Sugar or 1 tbsp. honey

1/2 tsp. Chilli flakes

1/4 tsp. Ginger

1 large purple onion

3 scotch bonnets

2 ripe tomatoes

Fresh corriander (for sprinkling on top)

Method

Remember to preheat the oven to 200°C

1. Wash the chicken

2. Crush the stock cubes and add this to the chicken along with all the other spices and sugar (or honey)

3. Pour in the olive oil

4. Use your hands to combine the ingredients together

5. Transfer the chicken to a roasting tray

6. Wash your hands

7. Chop the onion and tomatoes into 4 and then sprinkle them on top of the chicken, spreading it out evenly

8. Chop the peppers into big chunks, then toss them on top of the chicken, spreading them out evenly

9. Toss the scotch bonnets on top

10. Sprinkle fresh corriander on top of the chicken

11. Roast in the oven for 20-30 mins

12. Serve
